Instructions:
Preheat oven to 175°C (350°F). Grease a 9-inch round cake pan or deep pie dish.
Pour the melted butter into the bottom of the pan and sprinkle evenly with brown sugar.
Arrange pineapple rings over the sugar, placing maraschino cherries in the center of each ring.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla, sour cream, and pineapple juice.
Gradually add dry ingredients to the wet, mixing just until combined.
Pour the batter evenly over the pineapple layer and smooth the top.
Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes, then invert onto a serving plate. Let cool completely before slicing.
