1. Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Prepare the Dough
In a mixing bowl, combine the sourdough discard, flour, sugar, baking powder, and salt. Add melted butter, warm water, and vanilla extract (if using). Stir until a dough forms.
3. Knead & Shape
Turn the dough onto a lightly floured surface and knead for 1–2 minutes. Roll the dough into a long rope about 1/2 inch thick. Cut the rope into small bite-sized pieces (about 1-inch each).
4. Boil the Bites
In a large pot, bring water to a boil and add the baking soda. Drop the pretzel bites into the boiling water in small batches for 30 seconds. Use a slotted spoon to remove them and place them on the prepared baking sheet.
5. Bake
Brush the bites with a little melted butter and bake for 12–15 minutes or until golden brown.
6. Cinnamon Sugar Coating
While the pretzel bites are baking, combine the cinnamon and sugar in a small bowl. As soon as the pretzel bites come out of the oven, brush them with the remaining melted butter and toss them in the cinnamon sugar mixture until fully coated.
