Instructions

  1. Slice the prime rib into very thin strips against the grain for maximum tenderness.
  2. Sauté sliced onions in a pan with a little butter until golden brown and caramelized.
  3. Butter the inside of the hoagie rolls and toast them in a skillet until golden and crisp.
  4. Whisk together the horseradish sauce and mayonnaise in a small bowl and spread onto the toasted bread.
  5. Layer the prime rib and caramelized onions onto the bottom half of each roll.
  6. Place a slice of provolone cheese over the meat and onions, then melt under the broiler for 1 minute.
  7. Warm the au jus in a small saucepan or microwave and serve it in a side dish for dipping.

Tips

  • Avoid overcooking the meat when reheating; a quick dip in hot au jus is usually enough.
  • Use a crusty bread like ciabatta to prevent the sandwich from getting soggy.
  • Add a dash of Worcestershire sauce to your onions while cooking for an extra flavor boost.
